Pesto Tortellini with Kielbasa

Ingredients:
1 Jar Pesto sauce
Mozarella cheese, sliced
Tomatoes, sliced
Ciabata bread

Using panini press make sandwiches layering pesto, mozarella, and tomatoes in bread.

Buffalo Chicken Wraps

Ingredients:
1 bottle buffalo sauce
1 lb chicken breasts
Tortillas
Lettuce
Ranch Dressing
Tomatoes

Place the chicken in slow cooker and cover with buffalo sauce.  Cook on high 4 hours or on low 6-8 hours.  Remove chicken and shred it.  Add some of the buffalo sauce from the crock pot to the chicken so that it stays moist.  Make wraps with chicken, ranch, lettuce, and tomatoes.

Almond Crusted Chicken with Olive Relish and Spinach

Ingredients:
Relish:
1 can large black olives, chopped
1 tsp. thyme
1 tsp. parsely
1 tsp. lemon zest
1/2 cup lemon juice
2 Tbs. olive oil
3 Tbs. red onion, finely chopped
Salt and pepper

Chicken:
1 lb. chicken fillet
1 cup almonds
1/2 cup bread crumbs
1 cup flour
1 egg
1Tbs. water
1 tsp thyme
Salt and pepper
Spinach to serve with

For the relish, mix all ingredients and let set while making chicken so all the flavors can meld together.  For the chicken, first mix the almonds, bread crumbs, and spices in a bowl.  Place the flour in a second bowl, and whisk the egg and water in a third.  Coat each piece in flour, then egg, then almond mixture.  Heat a pan with oil covering the bottom and cook chicken about 5 minutes on each side until cooked through and golden brown.  Serve chicken on a bed of spinach topped with the olive relish.

Chicken Throw Together

Ingredients:
3-4 Chicken breasts
2 cans cream of celery or mushroom soup
8 oz cream cheese
1 packet zesty italian dressing mix
1-2 cups frozen peas
salt, pepper, and garlic salt

Put everything but the peas and chicken in the crock pot.  Mix together until smooth.  Add chicken.  Cook on low for 6-8 hours.   Before serving stir in peas and cook 5-10 more min. on high to warm them up.  Serve over rice.

Spicy Chicken Empanadas

Slow Cooker Red Wine Braised Short Ribs

Ingredients:
2.5 Lb Short Ribs
1 Tbs Olive Oil
3 cloves garlic, whole
2 carrots, chopped
3 ribs celery, chopped
1 onion, chopped
2 Tbs. tomato paste
4 Tbs BBQ sauce
1 bottle red wine
Salt and Pepper

Salt and pepper the short ribs.  In a dry, hot pan sear the ribs so they are brown on each side.
Put all ingredients in slow cooker and cook 8 hours on low.

I served with roasted veggies and potatoes.


Swedish Creme

Ingredients:
1 cup sugar
2 cups heavy cream
1 packet gelatin
2 tsp vanilla
2 cups sour cream
Chocolate chips and fresh berries to taste

In double boiler cook sugar, heavy cream, and gelatin about 10 minutes until all particles are dissolved.   Let cool.  Beat in sour cream and vanilla.  In a martini glass, layer chocolate, berries, and creme.  Refrigerate 1-2 hours or until ready to serve.
